Hummingbird Cake

Did you guys know that hummingbirds eat up to 1/2 their weight in sugar every day? And that their hearts beat at 1,200 beats per minute? That's just crazy.

I still haven't figured out why this cake is called the hummingbird cake, but it sounds so deliciously appetizing. It sounds like something that's light and fluffy, something thats about to take off  at 200 flaps per second and cause fireworks in your mouth...

Nope. It's not. It's more like a glorified banana bread - undeniably delicious - but definitely more heavy and moist. Topped with delicious cream cheese frosting, it's perfect when paired with a warm cup of masala chai or milk tea, while reading the newspaper or a really juicy novel.

The main ingredients that set the hummingbird cake apart from other cakes are bananas, pineapples, and nuts. And ooh, do those nuts add texture to the cake. I usually prefer cooking over baking, but I don't think anyone can go wrong with this recipe. No need to pull out the electric mixers, just get a big bowl, a spoon, and your muscles.

Do try this recipe here and enjoy!
